When I was a little girl, I loved to have my afternoon tea with scones. In fact, I still do. There’s something incredibly magical about slicing a hot-out-of-the-oven scone into two flat halves and then eating them smeared with freshly-whipped cream and delicious rich jam.

Among the first few things I experimented with when I started learning how to bake a few years ago were scones. Even today, I get excited about whipping up a batch of scones, and anxiously wait for them to be done, just so I can pull the baking tray out of the oven, the warmth and fragrance of the scones filling my face.
