Imagine peanut butter, honey, marshmallows, and of course, Rice Krispies cereal, all part of the same bite. While this recipe takes a couple of hours to go from stove to table, the actual prepping and cooking time is only about 10 minutes, as the finished ingredients take shape in the freezer for two hours. This recipe serves 12 and it’s only a matter of time before people are asking you where you bought these peanut butter rice crispy treats. Yet you get to delightfully correct them by telling people this recipe is actually homemade.
Although this recipe isn’t too demanding in terms of cooking expertise, the sooner you start, the sooner these homemade peanut butter rice crispy treats can take over any outing or meal.
Gather the ingredients
Before you can alleviate your sweet tooth, you need to gather the ingredients for the homemade peanut butter rice crispy treats recipe. You’ll need butter, peanut butter, honey, mini marshmallows, and Rice Krispies cereal.
You’ll also need to grab two molds for the rice crispy treats. Olayinka uses two 8×3-inch molds for this recipe. When you get to the cutting step, keep in mind that while each mold produces six bars, five of the bars are about 1 ½ inches long and one bar is smaller.
Make the peanut butter mixture
Now that all the ingredients are ready to go, you’ll melt the butter and peanut butter over medium heat in a large saucepan, stirring constantly. It will take about a minute for everything to melt, yet continue to stir if it happens to take longer.
After the minute has passed, you’ll add the honey and marshmallows to the saucepan. Once again, you’ll stir the mixture so all the ingredients melt. This will take about 2 to 3 minutes. The sweet aroma will be tempting, but do your best to move onto the next step without diving in for a taste.
Add the cereal to the mixture and create the molds
After the 2 to 3 minutes have passed and everything is melted, you’ll add the Rice Krispies cereal to the mixture. Then, you’ll continue to stir so the cereal pieces are coated in the peanut butter mixture.
Now that the mixture is complete, it’s time to spoon it into the silicone loaf molds. Once finished, you’ll then place the molds in the freezer for 2 hours.
After 2 hours of freezer time, you’ll take the molds out of the freezer and grab a cutting board.
Take the mixtures out of the freezer, cut the bars, and serve
Next, you’ll empty the molds onto the cutting board and slice the peanut butter treats with a sharp knife. Place each piece on a serving plate. This recipe creates 12 bars. Share with your friends and family or enjoy them in batches!
As with any treat or meal, a side dish of some sort is always encouraged. Olayinka recommends, "a bitter drink so it balances out the sweetness!" That said, feel free to get creative as these homemade peanut butter rice crispy treats are so good that they can be paired with just about anything. Got milk, anyone?
