Whether you want to serve this on a bun and enjoy it as a sandwich or over a bed of mashed potatoes, it hits the spot and it’s truly a complete meal. Of course, one of the other important things to note is that you can make this all on a single sheet pan, making the cooking and cleanup a breeze!

Start by making a list and heading to the store. You will need bell peppers, onions, olive oil, kosher salt, ground pepper, oregano, basil, onion powder, garlic powder, canned fire-roasted tomatoes, and Italian sausage links.

Once you have those things, you can whip up this sheet-pan Italian sausage dinner.

Preheat the oven and combine the peppers, onion, olive oil, and seasoning

You will need to use an oven for this sheet-pan meal, so preheat yours to 375 F. In the meantime, take out a large bowl begin adding your ingredients. This includes the peppers, onions, olive oil, and the seasonings — kosher salt, ground pepper, oregano, basil, onion powder, and garlic powder. Mix to combine.

"It doesn’t matter what color bell pepper you use. I like to use a variety just to have the different colors, but it’s not necessary," Johnson notes.

Add the vegetable and tomatoes to sheet-pan

Grab your sheet pan and spread the seasoned veggies across the bottom. Next, crack open the can of fire-roasted tomatoes and pour it over the veggies. The liquid will help the veggies cook while also adding a ton of flavor.

"I like to use the can of fire-roasted tomatoes because the moisture from them makes the veggies tender and has an overall better flavor," Johnson shares. "If you don’t have fire-roasted tomatoes, you could substitute a can of diced tomatoes."

Last but certainly not least, add the sausages on top of the tomatoes and veggies. "You can use either mild, sweet, or hot sausage, whichever you prefer," Johnson shares.

Your oven should be preheated at this time, so go ahead and pop in the sheet pan and cook for 45 minutes. Be sure to flip the sausages once during the cooking time.

Serve and enjoy

When you remove the sheet pan from the oven, be sure to serve this dish quickly after, as it’s best when enjoyed nice and hot. Johnson provides a few suggestions if you want to add a side or make this a more complete meal. "I like to serve this with mashed potatoes. You can also serve it on hoagie rolls and with any veggie side dish or salad," she shares.

And, this would be an excellent meal for another day. "Keep leftovers for up to three days in the fridge and reheat in the microwave. It makes a perfect lunch," Johnson says. We hope you enjoyed this easy sheet-pan meal!
